Hi and welcome to the forum, Aldo may be able to advise you on Spain.
Spanish plastering is a totally different ball game to what we have in the UK, no float and set. Its generally escollera plaster a "plaster of paris" type plaster applied on 2 coats. They also use a lighter weight type called perlita and another called yeso. You will pick it up ok (over time) but its completely different to uk.
I know Spanish plasterers that are struggling to find work and English plasterers that for years made a good living in Spain using the Spanish method AND getting "English" imported plaster (mostly for expats) but the work situation is dire there unfortunately.
I would love to say go for it Spain and Portugal are fatastic places to live but TBH you would struggle to make a living at the moment and I would hate for anyone to make such a decision based on inaccurate info.
